This easy vegan chipotle mayo recipe is precisely what you need to kick up the flavor of your favorite Mexican-inspired dishes! Chipotle mayo is a popular and must-have ingredient in Mexican and Southwestern cuisine. It is not uncommon to find it served as a dip for appetizers as well as a condiment and dressing for burgers, tacos, and salads.

Unlike other vegan chipotle mayo recipes, my recipe does not use raw cashews and, therefore, requires no cooking. All you need is one bowl and five minutes of your time to whip up this creamy condiment. You only need five simple ingredients to make it, all of which you can find at your local grocery store or home in your pantry!

This vegan chipotle mayo can be easily made in advance, making it a perfect dip to serve at parties or to have handy in the fridge for the week. However, as delicious as it is, I doubt it will last that long!

? Key ingredients

Ingredients of vegan chipotle mayo in small glass bowls like mayo, finely chopped peppers, paprika powder, lime juice, and minced garlic.

Mayonnaise – I use vegan mayonnaise as a base for this recipe. 

Lime juice – Lime is necessary to give the mayo its zesty, tangy flavor. Freshly squeezed lime juice provides the best flavor, but you can also use bottled lime juice. Lemon juice works just as well!

Chipotle peppers – Chipotle peppers in adobo sauce give the mayo its unique flavor and add a bit of heat. You can also use dried chipotle pepper seasoning or chipotle powder in its place. If you can not find chipotle, you can use chili powder instead.

Paprika – Sweet smoked paprika powder is what adds smokiness to the mayo.

Garlic – Fresh garlic clove further enhances the flavor. The garlic needs to be finely minced to blend well into the mayo. You can also use garlic powder.

Making vegan Chipotle mayo

STEP 1
Before beginning, finely chop the chipotle pepper and mince the garlic clove.

STEP 2
Combine the vegan mayo with the freshly squeezed lime juice, minced garlic and chopped chipotle pepper in a bowl. Stir well.

Add smoked paprika in a bowl. Stir again.

? Expert tip

To preserve your vegan chipotle mayo longer, substitute some of the lime juice with a bit of apple cider vinegar.

? Variations

With more heat – For a spicer mayonnaise, you can always add more chipotle peppers. You can also add a pinch of cayenne pepper.

Extra flavor – If you want to kick up the flavor of the mayo a notch, try adding more flavorful spices, such as onion powder, cumin, or paprika. You can also add a bit of maple syrup for a sweeter taste!

With a different base – I use plain vegan mayo as a base for this recipe. However, you can also use cashew mayo or avocado oil mayo.

Vegan sriracha mayo – Swap the chipotle peppers for sriracha sauce to make a creamy sriracha mayo.

Chipotle mayo is a versatile condiment that you can use to enhance many different Mexican-inspired appetizers and dishes:

As a dipping sauce – Use it as a zesty dipping sauce for french fries, sweet potato fries, breakfast potatoes, onion rings, or my vegan fried chicken.

As a condiment – Use it to add flavor to your favorite burgers, tacos, or burritos. It makes the perfect addition to my Chipotle black bean burgerportobello mushroom fajitas, or Chipotle veggie burrito.

❄️ Storing tips

In the refrigerator – Store the prepared mayo in an airtight container or jar in the fridge for up to seven days.

In the freezer – I do not recommend freezing any mayonnaise, as the components will separate and curdle once frozen.
