Chickpea Korma

This creamy, aromatic curry brings together tender chickpeas in a luscious sauce that’s rich without being heavy. The magic happens when you blend cashews with coconut milk, creating a base that’s naturally thick and satisfying. Garam masala, cumin, and coriander build layers of warmth, while a touch of ginger and garlic adds that punchy brightness you crave in a good curry.

What makes this dish special is how the chickpeas absorb all those spices, becoming little flavor bombs in every bite. The sauce clings beautifully to each chickpea, and the whole thing comes together in under an hour. It’s comfort food that doesn’t compromise on nutrition—packed with protein and fiber that keeps you full for hours.

Serve this over fluffy basmati rice or with warm naan for scooping up every last bit of sauce. Lentil Bolognese

This sauce transforms humble lentils into something that clings beautifully to pasta, creating that rich, hearty texture you crave from a traditional bolognese. The lentils break down just enough to meld with tomatoes, garlic, and herbs, building layers of savory depth that make each bite satisfying. I cook mine low and slow, letting those flavors marry and concentrate into something truly special.

What makes this sauce brilliant is how it holds up to everything you’d pair with its meaty counterpart. Toss it with your favorite pasta—penne, spaghetti, or rigatoni all work beautifully. Spoon it over creamy polenta for a comforting dinner, or layer it in lasagna between sheets of pasta and béchamel. I’ve even used it as a base for stuffed bell peppers, and it never disappoints.

The beauty here is in the simplicity. You’re building real flavor from whole ingredients, nothing processed or artificial. Just lentils doing their magic, soaking up herbs and spices, creating a sauce that feels indulgent while nourishing your body completely.

The texture is spot-on—firm on the outside with a tender, flavor-packed center that holds up whether you’re serving them as an appetizer or the main event.

I love making a big batch of these on Sunday and eating them throughout the week in different ways. They’re incredible piled onto whole grain rolls with coleslaw for a hearty sandwich, tossed with pasta and extra BBQ sauce for a quick dinner, or simply served over brown rice with roasted vegetables. The beauty here is in their versatility—they work hot, cold, or at room temperature, making them perfect for meal prep or last-minute entertaining.

Some pickled jalapeños add a nice kick if you’re feeling adventurous. The beauty here is that everything comes together in one pan, making cleanup easy while delivering maximum flavor. The crumbled tofu soaks up a bold chipotle sauce, creating those caramelized edges that make each bite satisfying. I love how the sauce clings to every piece, building layers of flavor that remind me of authentic taqueria cooking without the complexity.

The beauty here lies in the tofu’s transformation. Once you press out the moisture and crumble it properly, it becomes the perfect canvas for that smoky, spicy marinade. The chipotles bring depth while poblano peppers add a gentle sweetness that balances everything out. You’ll get about 15 grams of protein per serving, making this a substantial meal base.

Serve this in warm tortillas with fresh cilantro, diced onions, and a squeeze of lime. It also shines in burrito bowls over cilantro-lime rice, topped with black beans, roasted corn, and your favorite salsa. Baked Chili Miso Tofu Bites

These tofu bites pack serious flavor with a sweet and spicy chili miso glaze that caramelizes beautifully in the oven. I cube firm tofu, toss it in a mixture of miso paste, chili garlic sauce, maple syrup, and rice vinegar, then bake until crispy on the outside and tender within. The miso brings that umami depth while the chili adds just enough heat to keep things interesting.

What makes these bites irresistible is their versatility. Toss them into grain bowls with brown rice and roasted vegetables, add them to noodle soups for extra protein, or skewer them with bell peppers and serve as appetizers. They also work wonderfully in wraps with crunchy lettuce, shredded carrots, and a drizzle of tahini sauce.

I often make a double batch because they disappear quickly. The leftovers (if you’re lucky enough to have any) taste incredible cold in salads the next day. The key is getting your oven hot enough to achieve that golden, slightly charred exterior that contrasts with the soft interior.

Lentil Burger

If you’re looking for a burger that actually holds together and doesn’t fall apart at first bite, this lentil burger delivers. I started making these after getting tired of mushy, bland veggie patties that needed a fork to eat. The lentils provide a meaty texture while packing in protein, and when you mix them with the right combination of spices and binding agents, you get a patty that’s sturdy enough to grill or pan-fry without fear.

What makes this burger work is the balance between cooked lentils, oats, and aromatics like garlic and onion. Season them generously—I’m talking cumin, smoked paprika, maybe some fresh herbs—and you’ll have patties with real depth of flavor. The trick is to let the mixture rest before forming your burgers so everything melds together. You can make a big batch and freeze them for those nights when you need dinner fast.

Serve these on toasted buns with all your favorite toppings: crisp lettuce, sliced tomatoes, pickles, and a good sauce. I love a tahini-based spread or classic mustard and ketchup. They also work brilliantly crumbled over salads or tucked into pita bread with fresh vegetables and hummus. However you eat them, you’re getting a satisfying meal that doesn’t compromise on taste or nutrition.

Classic Crispy Falafel

There’s something deeply satisfying about making falafel from scratch. You soak dried chickpeas overnight, then pulse them with fresh herbs, garlic, and warming spices until you’ve got this fragrant, bright green mixture that smells like every Middle Eastern street corner you’ve ever wanted to visit. The secret to crispy exteriors and fluffy interiors? Never use canned chickpeas, and let that mixture rest in the fridge before shaping.

I shape mine into small patties and fry them until they’re golden and crackling on the outside. Each bite gives you that perfect contrast—crunchy shell breaking into soft, herb-packed centers loaded with protein. The chickpeas bring around 15 grams of protein per serving, making these little fritters surprisingly filling.

Serve them tucked into warm pita pockets with tahini sauce, crisp lettuce, juicy tomatoes, and pickled turnips. Or pile them onto a mezze platter alongside hummus, baba ganoush, and tabbouleh. They’re perfect for meal prep too—make a big batch and keep them in the fridge for quick lunches all week.
