The father was absolutely right to refuse to change the restaurant. Hijacking someone else’s celebration to accommodate a picky palate is incredibly rude. However, gracious parenting also means recognizing when a situation is a lost cause.

Telling a growing teenager to make do with a garnish-sized salad was a bit uncharitable. The proper etiquette here is to let the daughter gracefully bow out of the dinner, order her a pizza, and enjoy the sushi without the side of teenage angst.
